Tasting Notes
This olive oil was born from the passion and curiosity to know the aromas and flavors of our varieties; even those considered minor cultivars for years. Rossellino owes its name to the particular color and shape of the olives reminding cherries that birds love.
This olive tree was already known in 1700 as a plant native to the olive growing area around the city of Florence. Its flowers are self-compatible and the fruits ripen early taking on that beautiful "reddish" color that makes the Rossellino easily identifiable in the fields.
Perfect condiment for
it is very suitable for the seasoning of cold dishes based on cheese, fruit, and vegetables such “carpaccio” with pears and tasty robiola-cheese, pasta with “pesto” or tomato sauce and sweet pecorino, meat carpaccio or veal.
